Philippe Chatillon, wine maker, has been a former estate manager on vineyard of La Pinte in Arbois (39, Jura) during 18 years.
While a travel in Jura in January 2013, he decided to create his own vineyard. He found in Passenans (Jura), on a well exposed hill, a grape of Savagnin. Then, he founds a Melon à queue rouge and Gamay. Further, on a more calcareous soil, he buys old Pinots noir and Chardonnay. The adventure starts with 2 hectares.
At the end of 2013, he must leave 1 ha of Savagnin on Passenans. He finds then in Arbois/Mesnayaux Nouvelles 1.86 ha of Savagnin and red wine, in biodynamic. Then, further 87 ha of Savagnin. In the continuity of his experiment in organic and biodynamy, he works his grapes with the pickaxe and spray.
Towards natural and organic wines…
Philippe Chatillon makes his wines with a lot of love and passion. He accompanies each stage of the vineyard to create the healthiest grapes.
From the beginning, he makes the choice to practice an organic culture. This technic obliges a special care and always more presence in the vineyards.
The grape harvests are entirely manual. The grapes are collected in small containers and arrive whole at the cellar This avoids oxidation. In the vineyard as in the cellar, no week killer nor chemical product of synthesis is used. Only the pickaxe cherishes the stock. Philippe works with products of nature: dung of horn, tea of compost that he ferments during 24 hours of a mixture of algae and mushrooms that is then spread on the ground.
In the cellar, the grape is accompanied to express its fruit and its soil. It’s old-wined in kegs in an old cellar of the 17th century. The breeding in kegs brings energy to the red wine and the white ones becomes smoother while keeping the nervousness of the soil.
According to him, a good wine is made in the vineyard, without chaptalization, nor yeasting, from grapes resulting from organic agriculture and in biodynamy.

Bio-harmony what is it?
Philippe Chatillon works his wines in bio-harmony. According to him, the vibration of the sound is important since it allows to balance the wines at the cellar.
He uses a crystal harp and singing bowls to harmonize the wines. This brings an energy, a search of harmony. The wine is assembled for bottling without filtration or fining.
